Souvlaki (lamb, pork, chicken, fish...even veggie)

I use this with chicken. In Greece it's traditionally lamb, or sometimes pork, but chicken is great.

Ingredients

• 800g Meat (Chicken Breast, Pork Shin, Lamb Leg Steaks)
• 1tbsp Dried Mint
• 1tbsp Dried Oregano
• Juice of 1 Lemon
• 100ml Extra Virgin Olive Oil
• 2 Cloves Grated Garlic
• 1tbsp Red Wine Vinegar
• Salt & Pepper

Method

• Cube the meat into 1 inch chunks
• Place all the ingredients in a bowl
• Marinade for at least 30 minutes, but preferably longer (overnight or marinade in the morning for evening tea)
• Skewer the meat
• Heat your barbecue or a griddle pan to maximum
• Cook for 8-10 minutes

To serve make a sandwich with warmed Pitta bread, Tzatziki, chopped cucumber & red onion, and sprinkle over a little hot & smokey paprika if you wish.

thank you for your great recipe it looks good . My question could you make this in a wok on high temperature? what do you think since its in one inch cubres insead of sticking it on skewers?

I've never tried it in a wok - I can see how it'd work, though the constant movement of the meat may result in the outside not getting so crispy, which is a big part of the appeal.

Maybe get a large frying pan/griddle/skillet, lightly oiled, put the cubes on for 5 minutes, then turn and cook for another 5 minutes.
