Smoke in Stoke

Greetings from sunny Stoke on Trent

Been smoking for about 3 months now after being fascinated by the food on tv shows like DDD. So much great info and advice on this site it'll take me a while to get through it, but Im working on it.
Started off small with a chicken or two. First time Ive ever been complimented for my cooking. Moved onto a pork shoulder looked like this when I'd finished

Im lucky enough to live a few miles from an abattoir so sourcing decent meats hasnt been a problem. That is as long as I remember to call it a collar rather than a butt, some very strange looks first time I visited.

Recently had a housewarming and my ProQ excel did me proud. About 20lb of pork collar cooked day before, pulled then stored. Got myself some bear paws from the states, made short work of that pork. Slow cooked some chicken quarters on the morning and grilled burgers and sausage on the night. Once cooking was done with removed the stackers and used it as a fire pit. Fantastic.

Anyway, thats enough from me, was supposed to be a quick hello. Looking forward to doing some brisket next and mooching around this site. :-)

Welcome to the site, Pork looks great :D I only started a few months ago too so I'm with you, and still learning after building my own UDS. Your lucky to be so close to Paul Goulden's smoking wood supplies too, I'm waiting til I go up there with work before I get some, I'm struggling to source decent choice of wood down here in Northants

Dam, Ignore that about wood for smoking, wrong Stoke ! :shock: That knackers my plans for getting some wood lol :lol:

ha yeah, I almost made the same mistake myself after seeing his website. Was all ready to jump in the motor till I checked the address one last time. We do have a couple of sawmills/wood suppliers not too far away and I'll be having a word. If I sort something out I'll be sure to post it.

welcome Welcome . as for wood if u txt paul about the wood he will post it ya i got3 boxs of mixed for 34£inc delivery
i used some apple wood on my ribs they were great.
