Loving the name by the way - Still use the term Dinlo on a regular basis!

Thanks, I thought as much.

As for 'dinlo', it needs a wider audience!

I don't like the idea of puck based machines personally, but if money is no object, a large Bradley will do hot or cold smoking, can be set up and left to do its thing and forgot about until the food is ready. I've never used one, but I've read a lot about them, and would have one if I could live with the expense of buying the wood pucks. The smokers themselves seem rather good value.

In contrast to my previous reply I'm having a rethink on the Bradley mainly because of the ease of use. I've been reading a lot of posts on forums and some of the discussions talk about people setting their alarms to get up in the middle of the night to tend to the smoker and constantly monitoring temperatures to make sure they're correct, this was not what I had in mind!

There's also a lot of conflicting opinions on the Bradley (I'm looking at the digital 4 rack) whereby some people swear by them and others complain that the build quality is poor.

If I wanted to do a 10 hour smoke in a WSM will I be constantly monitoring the temperature and fire or is it more of a set it off and leave affair?
