Hi, I'm new here.
This forum seems to be a goldmine of BBQ info, and it's so great to read stuff from people outside of 'merica who know what they're talking about (and who will be able to recommend things it's actually possible to get hold of in the UK).
I've been enthusiastically burning stuff on my Webber kettle for some time but in recent years I've started to learn about proper barbecue and now I can't get enough.
I took delivery of my new UDS from Pit Barrel Cooker Co yesterday and today i am engaging in a trial run.
It's nothing like how I'm used to cooking, there's an entire bag of lumpwood in the basket... The company reckons the pig ribs I put in will cook perfect in 2 hours, I reckon they'll be cremated but we'll see.
