Greetings from Leicester

Hi folks. Thought I'd join up - I'm about to fire up a Filing Cabinet smoker I've just finished building, and I thought it would be a great place to gather some ideas, a few recipes, and some good advice. I've done quite a bit of long & slow pork shoulder, but have yet to try cold smoke, and I'm looking forward to BBQ brisket. Any really good sources around for reasonably priced oak / hickory / apple wood chunks?

Many on here recommend Paul Goulden - http://bbqsmokingwood.co.uk/. I am yet to order chunks as I have a few bags of wood chips that I'm getting through first, but when I order proper chunks I'll be contacting him :)

Welcome to the forum! I'm interested in a bit if cold smoking. Be good to do some cheese.

Red Leicester perhaps? ;)

I'll probably get shot down for saying so, but Red Leicester is a fairly pointless cheese, IMHO. I'd rather smoke some cheddar any day!
