Hello all, I am a designer and mechanical engineer based in North Yorkshire. I am not new to outdoor cooking but it is specifically hot smoking which brought me both here and onto the US forums for knowledge and inspiration.
After a few days of good weather an bbq'ing earlier in the year I started looking out for deals on a medium sized WSM but could not find anything which suited me at the right price and my interest faded with the decent weather. A recent trip to The East Point Grill in Barbados and some superb brisket reignited my interest and I quickly started designing my own smoker.
I have signed up to both share my build ,thread to follow soon, and pick up any tips and recipes from you guys.
