In contrast to my previous reply I'm having a rethink on the Bradley mainly because of the ease of use. I've been reading a lot of posts on forums and some of the discussions talk about people setting their alarms to get up in the middle of the night to tend to the smoker and constantly monitoring temperatures to make sure they're correct, this was not what I had in mind!
There's also a lot of conflicting opinions on the Bradley (I'm looking at the digital 4 rack) whereby some people swear by them and others complain that the build quality is poor.
If I wanted to do a 10 hour smoke in a WSM will I be constantly monitoring the temperature and fire or is it more of a set it off and leave affair?
