Hello from Chester

Hello - My name is Geoff Ryall-Harvey, I live in Chester. I'm 53 and used to run a management consultancy company that held contracts with the Department of Health. In 2008 I retired to become a full time stay at home dad to our baby daughter, Hannah. We had another daughter, Gemma, last May. I also have a 27 year old daughter from a previous marriage.

I have a brick built woodfired oven in the garden and use it often to make pizza and porchetta. I also enjoy BBQ'ing on my Weber kettle and, after lurking on this and some American BBQ Forums, I decided to kick it up a notch.

I built an Ugly Drum Smoker last week. I can weld and fabricate so it didn't take too long and cost about £80 all in.

I test fired it last Thursday and that went well. On Friday I made up a basic rub and applied it to a boned leg of pork and a couple of racks of baby back ribs. I fired the UDS up at 10am on Saturday and gave the leg of pork 6 hours and the ribs about 2 1/2 hours. Indicated cooking temperature was 215 degrees farenheit. They were very tender and flavourful. The pork leg was a little on the dry side but was all CostCo had in - something with a little more fat and connective tissue would sort that out, I'm sure. Out of curiousity I let the smoker continue to burn and it finally fell below 200 degrees at around midday on Sunday.

I'm going to fire it up again on Saturday and I think I will do belly pork with a rub that contains fennel and gives a little hint of being a cross between BBQ and Italian porchetta.

My other interest is motor cars. I have a Blackjack Avion trike and run the club for them. I am also a hot rodder and I'm currently building a Model T Modified style hot rod. It's an all steel 27 body on a boxed, pinched and Zeed 1921 One Ton Model T Truck chassis. It has a 1957 347 Pontiac engine with a 3 speed gearbox and 3 pedals. Front brakes are 1950 F1 on a suicided 39 drilled I beam and a Model A spring. Rear axle is an unknown Ford on a Model A spring (the axle is behind the spring). Steering is cross steer using a Burman box. Seats are from a Dakota (DC3) - there are a lot of aircraft bits on the car. I can post pictures of these cars if anybody is interested.
