Ey up pal, welcome from a fellow Northerner. This is a fantastic site and the rest of the users on here are really friendly too and offer some great advice. Ive also been into BBQ grillin for years but never tried proper smoking so we'll probably be asking the same questions. Good luck with the uds project. Im rubbish at making things so I've spent some of my savings on a WSM. Just been to Bookers and they have pork shoulders, briskets and some real meaty spare ribs too and 12kg bags of restaraunt charcoal for £7.99 too.

Cheers Ian

Welcome indeed old chap from a semi serious softy southerner ;) For heavens sake DON’T go without your pulled pork. No you can't get the proper smoky taste, but for the outlay of a couple of quid you can get close. Get a cheap rolled shoulder joint from one of the supermarkets and a bottle/jar of your favourite bbq sauce and most importantly of all a roasting bag. These are cheap enough but can be bought with a spice mix for around 50-75 pence. Season said pork to your liking, bag it, put it in the oven at around Gas Mk 1 - 140C leave it for 4-5 hours or longer if you like. Grab a tea towel/oven glove and gently push on the top of the pork until it squishes (techy term you know), if it doesn’t, put it back for a while and keep testing it. Now holding the bag, carefully position it over a large jug/pan and snip a corner off, let all those lovely juices run out, open the bag and pull your pork. Mix pulled pork with the bbq sauce AND some of the juices and Robert becomes a close relative. If you get round to freezing any leftovers the jellied juices get put in the bag/box for when you reheat the pork again.
This is what I did for years before finally getting proper low n slow smoky pulled pork. I still do an oven cook once in a while just to get the juices to assist in reconstituting my “proper pulled pork”
