Hello from Woking

Hi.
Just unboxed and assembled my new WSM (47cm).
I'm quite tempted to pop out to Tesco and baptise it with some meat.
But I don't really know what to get.
Any thoughts?
Also I read some things about stuff going on inTongham, I like to ride down there on my bike, stop off at the brewery for a beer and then wobble onwards. Didn't know there was any BBQ stuff there. Anyone care to fill me in?
I own:
WSM 47, Weber 57cm OTG, Weber Q120
I have done the Christmas turkey on the Kettle, it comes out pretty well, as do other high heat items, but we are rib fans and I thought a new toy was a better choice than trying to figure out temperature control on the kettle.

Welome aboard.
The first IBQN competition of the year is happening in Tongham this weekend. Some of the best BBQ'ers around will be there this weekend.

hey congrats on the new purchase
Got to love Tesco s feeding the 24hr BBQ habit
I'm in for an all-nighter myself, hoping to get my pork shoulder in about 1am ish. Still nice and warm outside so hoping to not have to get up at 6am
I started off smoking beer can chickens, seemed pretty easy to get half decent results and gave me practise on stabilising my temperatures. Pork shoulders seem to be able to take a bit of neglect or punishment and still yield cracking eats.

I never shop at Tesco TBH, but they do have the advantage of being open 24 hours.
Have done grilled beer can chicken, they always come out well. Smoked is interesting though.
Am a bit nervous of huge lumps of meat, not so much cooking it, but the thought of ingesting 5kg of pig fat,tasty yes, but probably deadly.
It's probably no worse than what I usually put on the BBQ - two thick steaks, burgers, chicken wings, sausages, etc - but still. Always seems a waste not to put half-a-dozen different things on, when you've got a fire going.

Thats why you need a vac packer! The freezer will eat it for you.

Hi Matthew. Good to have you here. Congrats on the new smoker and once you start using it you will never stop. So your only down in Woking then. I used to live around there and i am only still 20 minutes away. Well again welcome and might see you either Saturday or Sunday over at Tongham.

Just christened the WSM with 3 racks of ribs and a chicken. I made the mistake of shopping a hurry, picking up some Heinz BBQ sauce, and put that on the ribs. Kinda ruined them, so sweet. Normally we have something like 'Extra Spicy Peri Peri BBQ'.
The chicken was ok but not smokey enough. Maybe more wood chips next time?

Just went to Morrisons to find something more substantial to BBQ. Wasn't terribly inspired, it's always a mistake to go shopping after dinner.
They had a 1.2kg beef brisket, but I thought it would be too small to smoke properly. Didn't see much else besides the run-of-the-mill baby back ribs.
What do you guys find to do 'low and slow' in the supermarket?

ASDA often have large rolled shoulder joints, not all are proper joints i.e. made up of some bits and pieces so I generally keep them rolled. I know the rub doesn't get all the way in when the skin is on but it's a workable compromise for home.

Went to Waitrose, they've always got baby back ribs in stock, also had some marinated beef 'rack' ribs, little riblets.
Then went to the butcher, they had whole pork shoulder, £7.99/kg (about 5kg), Jacob's Ladder £5.99/kg, Brisket on the bone £5.99/kg.
Bought the Jacob's Ladder, 4 ribs was 3kg, have separated them, rubbed them, and chucked them on the WSM.
Maybe brisket next time.
