Hello from Maidstone

Hi there , I'm Dave from Maidstone and an absolute complete novice at the art of the "low n' slow" , had my first go last night and I must say I'm impressed. I've got an old lovo drum BBQ from homebase that I've adapted alittle bit and it didn't work to bad.

Welcome! Lots of the forum peeps are at an event this weekend - hence the lack of response to your intro - they'll chime in when back I am sure.

Thank you all for the warm welcome , sorry I didn't take any pictures but I will next time and I'm sure it won't be long 'till the next attempt. I tried to low n' slow some chicken thighs with some oak chips , making up a rub of paprika, sugar, salt and pepper in equal parts . The cooking n' smoking part went ok but the rub needs a lot of work. Practice makes perfect !!

I don't think it's cheating (but what do I know ;) ) to use recipes from the web. There are loads on Youtube, then vary them depending on what you have in your cupboards. I don't like strong chilli heat so swapped stuff about.
A word of caution as I understand it American chilli powder contains fillers so is not 100% chilli. UK chilli powder is just that chilli powder :shock: so maybe cut back a bit. I might be wrong, it wouldn't be the first time but worthwhile taking care. :D
