Hello from the South East

Hi Everyone.

Stay at home dad here (2 x boys 3 and 4 that I look after full time). 3 years ago I lost a big indoor golf simulator company down in Brighton Marina (along with a lot of money and nearly my house too), I'm still recovering, and after a long mind trip and having always cooked (we just did sausage & ale at the venue), I am throwing myself into a low & slow adventure which will hopefully culminate in cooking for the public at small events/pubs etc.

This is going to be low start up and low fixed costs/overheads affair (instead of 30k a month and 1.5 yrs of sleepless nights!) It's going to be something that I enjoy and that occupies my mind which, at the age of 48 will be new to me!

At the moment I am consuming books by the dozen but am 'unpracticed' in the art as I don't even have a cooker yet! For ease I am looking at a pellet smoker, probably a Green Mountain Grill (I can hear the groans) but I will want/need different units for different things.

I am looking at the Green mountain grills at the moment having been round the houses. I would love to cook with wood or charcoal but I really don't think that this would be feasible for events where I am starting the cook the night before.

I would like to offer help to anyone, free of course, who needs a hand at events or comps (25 years media sales experience, ex army, traveled the world, jack of all trades, master of none!). I would be very happy to do so.

My first gig is for our local tennis club at the end of August!!

Open minded here, any advice, criticism and donations gratefully received!

P.S Has anyone tried any of Nerius' <--- (spelling) set ups over at BBQ mates? I liked the look of his Yoder Durango looking/type thing!

Good luck Adam, wish you the best with the venture; love your resolve & your desire to succeed with this.

I'm reading many threads with great interest, as frankly not enjoying my job despite it paying well, plus linked to the comfort of corporate salary & looking for something that I have passion for doing day in, day out that I bounce out of bed for, even if income is lower - currently re-evaluating my last decade+ in category management for something more fun.

Let us know where you are based.

Hi Adam if you are still in the Brighton area there are two teams/people that spring to mind. The first is John who cooks a fantastic BBQ menu at the World's End who is on this forum as Joker Smoker and Charlie who is in Brighton and is on the forum as Smokin Penguin.

Dropping either or both of them a PM can't hurt.

Glad you still have a positive attitude and are on the bounce back

Very kind of you all, thank you. I'm in Bromley S.E London Matt, where are you? I used to work on a supermarket magazine so i think i know what you mean, i left the company car and expenses account nearly 6 years ago now, I think it has made me a better man and life isn't just passing me by now, i've learnt a lot, i'm a big believer in fate to.

Thankfully John and the bar staff kept their clothes on whilst we were there. Can I suggest the chicken as opposed to all the other BBQ delights (or as well as ;) ), I have said it before on here but I've never had a chicken breast that tender and juicy before or since despite my best efforts.
