From Birmingham, originally from NYC. Have just found the forum because I had a question about a type of wood to use (see the smoking questions forum).
My equipment is nothing special - the Montana (Homebase brand) Four-burner Gas. Not the greatest brand, but when money is an issue (and the grill is 65% off!) I always say (and have proven) that it doesn't matter what the tools are, a good cook just knows how to get food to taste good.
I'm not big on smoking, I prefer hot and fast grilling. I have, though, a stash of cedar planks from Costco in the states that I occasionally take out to make a rack or usually a salmon. I've found that a good side takes around 90 minutes on the centre of the grill with only the outside burners on low/med--of course never when the wife is hanging the washing though!
