hello folks,,just an introduction,been tryin to smoke on and off for a few years with mixed results,my partner got me a braunfels smoker this week and today is the day i tried it,, i did all the usual mods and gave it a burn to clean and seasoned it,sealing and fire rope ,couple of new thermometers etc, and today smoked a beer can chicken, and still got a pork shoulder on the go,,got some apple and hickory from dobbies and so far so good,, spose itll all be trial and error for a while, struggled to get the temp up to 250 ish, but somehow its there or thereabouts,, any advice on temp control etc much appreciated,, looking forward to a good read through the threads on here,,thanks for having me

Hello and welcome. I can't advise you on temperature control on your smoker as I haven't used one before however it's taken that you need to learn how it runs, from other cookers I would suggest only lighting a minimum amount of charcoal, catch it on the way up i.e. don't let it overshoot and balance the vents, close the bottom vent up, then the top, then the bottom etc...

Have fun, if push comes to shove you can always get a temperature controller, I have an iQ110 that I don't use that's open to offers!!

all went ok,, maybe a bit too much smoke but i,ll learn,, its a horizontal with the firebox at the side,,i,m using fireproof slate floor tiles as tuning plates,, will maybe need to source some steel instead,, still,, it was enjoyable and was all eaten so thats something,lol

I use the same smoker , had some really good results on it.

After I changed my fuel to a good lumpwood , using the minion method works a treat.

Has a good grill space on it aswell.

All I done is seal it, and got myself a maverick thermometer.

I was thinking about extending the chimney down.
I have done a 12 hr cook with big k ach15 with hardly any trouble. :)
