Welsh Smoker

Hey all, just joined and thought I'd say hi.
Bit of a foody and have loved BBQ for years, I used to use my uncles stone BBQ with grape vine wood he'd bring back from France each year. Unfortunately since those days ive been using a gas BBQ and miss the authentic taste you get from charcoal/wood...
So I've just purchased myself a ProQ Frontier to have a go at smoking. It arrived today but unfortunately the courier had dinged it quite badly so have to wait for a replacement :cry:
In the mean time I'm looking around for accessories, tips, tricks and recipes... so expect a few questions

After the kind lady at www.Hotsmoked.co.uk said I could use my damaged lid while I wait for a replacement, I decided to give chicken and ribs a try....
Wow
Chickens cooked vertically for 3 1/2 hours with maple chips and a simple rub... Fall off the bone juicy chicken that stayed moist even when cold.
Ribs cooked 6 hours, 4 in maple smoke 2 in foil, rubbed with Bart Cajun spices.. Pretty good although the end ribs were too smoked... Will do a BBQ sauce for them next time... Tomorrow

I got my ProQ from Hotsmoked and they were great. Sounds like you had a great first outing as did I with mine.

Look forward to hearing about more cooks in the future.
