Hello from Dorset

Not new to BBQ but relative virgin at smoking. Have used my Weber 57cm one touch for smoking ribs a few times with mixed results as it is difficult to regulate temp and hood thermo is inaccurate. I'm probably rubbish too!!
Just invested in a WSM 47cm and am looking forward to its inaugural run this afternoon. Doing a spatchcock chicken and hoping not to poison the family. :?
