New to smoking from Essex.

Hi,

I'm surprised at how many posts i've seen from Essex people! (I'm from Basildon)

Been cooking for a while, absolutely love smoked food but i'm completely ignorant to the world of smoking so please excuse the stupid questions i'm probably going to ask.

I was gifted an off-set smoker but the metal is quite thin 1.2mm at most so i'm thinking i''m going to have temp issues. Anyways thats for another conversation, if anyone knows any decent butchers locally a point in the right direction would be nice, the man who works in our nearby butchers is a complete c***.

I'm near Chelmsford and my local butchers is a star. I often get him to hack me a steak off the forerib in shop.

Now I've finally got a smoker I was quizing him on what he can get, namely if cal ahead he can do me a rack of beef ribs and he has a few salted beef joints.

Its worth having a chat with them, its in there best interests to be nice. Any local farm shops about, have a chat with them about suppliers etc, might be able to find a farm or slaughterhouse.

Which Butcher do you use WEBB, does he do Packer Brisket and Boston Butts?

I've no idea about cuts to be honest, I'm new to all this. I know they get whole animals in, so I'm pretty sure they'll cut whatever you want.

Its one in Witham.

There's also a farm near Halstead called Broomhills Farm (they have a Facebook page) who sell fresh meat, that they have slaughtered I believe. They might be worth a try.
