I'm brand new to low and slow bbq in spite of loving the food so decided it was high time I started doing it myself. I already have tonnes of experience with outdoor grilling on charcoal, gas and hot plates out in Australia although I'm sure little of that will help me on a proper bbq.

Originally from Beverley in East Yorkshire and currently living in Leeds.

Looking forward to learning from you all once I pull the trigger on a bullet smoker :D

Let us k now the route you plan to go down, low and slow or continue with hot n fast. Just built a UDS and it was a doddle

Hi Kiska, for some reason I didn't get notified you had replied. Thanks for saying hi.

I'm going low and slow but planning to get a Weber q3200 soon for the occasional hot and fast chicken or sausages after work with a cider or 3.

I bought the pros frontier elite in the end and have so far done chicken thighs, spare ribs and brisket. The thighs weren't bad, ribs need more work but the brisket was amazing. Trying a whole chicken and pork shoulder next.

How are you getting on with the UDS?

Hi

Yep pretty happy with it and it was an absolute doodle to build. Building a second for cold smoking. Got a good supply of clean barrels for a tenner each. Also bought a BBQ Guru digi q dx2 to compliment. Still keep my Weber as my missus likes hot and fast!! burgers and sausages of course. Lol. She's not keen on Smokin hence the reason I am going with my son to the American Royal in Kansas city in October, Big Boys week away we will be chewin T-bacco and whittling wood in cowboy country. The little smokey joe is a cracking little bbq for a quickie. I also been cooking the od steak n Prawns on my clay Chimanea, bit caveman styley but hey very good. Just stuck the chrome grill in from my Microwave (for grilling never gets used) and clagged the meat on brilliant!
