Hello from the Colchester Smokehouse!

Hi all, we have started a smoking business in Colchester supplying families with slow/smoked meats as a takeaway alternative. We are now getting into supplying the local pubs/restaurants with our "fresh from the smoker" meats. We have three smokers, one traditional horizontal coal smoker, a gas upright and an electric upright. Our passion is meat, and we wanted to join The British BBQ Society to further our love and understanding of smoking. Looking forward to sharing and swapping pearls of wisdom, hints, tips and tricks.

Hi and Welcome

It looks awesome well done :D

What make of rigs are you using and do you find them efficient? Are you using wood or coals on the horizontal? Are you finding the UK brisket OK with it being a bit lean (prone to dry out). I know there is a guy in Smithfield's doing USDA prime brisket.

Coals on the horizontal, may try the wood. Brisket is not too bad, get it from TheMeatManEssex (check facebook) he goes to Smithfield's and delivers across colchester.
Might ask him to sniff some USDA brislet out!

No reason for me either but you can't beat good food! So hard to find barbie food in Essex.

Not that local, in Chelmsford. How does the time slot thing work? Guess you can't just turn up?

Afraid not, due to the length of time it takes to smoke/cook. I have orders a week in advance normally. I get orders for say, some brisket and pork ribs for collection 1pm wednesday and that slot gets booked. That way I can get enough meat required and also be able to plan cooking. I only have three smokers at present, I really need a big one. I'm also looking for a catering trailer so I can setup at venues etc. What I would really like is to open a restaurant so I can keep the smoker going all day.

I've always fancied doing a pop up at the sid3 of the road. Ping on twitter when it will be ready and do a fixed amount of food and when it's gone it's gone.
