Hello from Milton Keynes

Hi

Relatively new to the site and just trying to get to grips with sourcing meat and smoking, i purchased an american style offset smoker as i used these when i was in the states and get on really well with them..

As it has only just turned up and quickly assembled i would like to make the most of this coming weekends good weather and im looking to order some meat in, do you guys have any ideas of where i can order at such short notice?

I have already spoken to my butcher as i get all my meat from him but he cant or wont get me the type of cuts im after, i would love to get my hands on brisket which isnt rolled etc..

The simple answer is to find a different butcher. I needed to try several before I found one that would give me what I needed. If you can, find one that supplies the local restaurants and schools as they will be the most likely to understand what you are looking for. Thick un-rolled brisket will usually need to be ordered a few days in advance as this isn't something that they will sell a great deal of. Explain that you want the thickest piece they can get and you will end up with one that our US friends may just consider cookable LOL. Also ask them to leave the meat on full racks of ribs too. You will then end up with something approaching the US style ribs.
