First time Poster!

Hi all, - well, this is just what i have been waiting for - Dont know why its taken me 6 months to find this place!
Bought my first off-set smoker early this year and have had some successes - mainly doing a long smoke with whole chickens, and in particular pork shoulder for sliced pork rolls.
Main issue is around temperature, and in particular woods and charcoal, however I will create a sepewrate thread for that - just wanted to say hi!
