I found a nice recipe for oven roasted pulled pork and gave it a try with a pork hand cut, the results were amazing !!!

Pork hand is such a great cut, still have a few left over from our pigs and the juicy meat vs abundance of crackling is a real winner!

Your not wrong there Toby, it's the first time i have tried this cut and man was it tasty, but what really got me is that our butcher has never ever sold this cut, and asked for a review of it (i even saved him a small bowl to try).
But for £15, you can't really go wrong.

to be honest I hadnt seen them either, but we slaughtered 4 pigs and I asked them to joint them. Think we will be getting some more this year, freezer is running low!

It's often know to older butchers as a "Hand & Spring" of pork, no idea why the spring bit. The, for want of a better word, shank of the pork is almost always used these days for sausages as there is a lot of bone in the lower end, think shoulder of lamb knuckles and you'll get the idea. As proven very tasty low n slow.

Just picked up a pork hand yesterday, huge beast of meat for £11. All i need now is a sunny day!
