Chilli Time!

I'm making a big pot of chilli today and thought I would document it, in case anyone's interested.

Spice mix
4 Tbs Cumin
2 Tbs Smoked Paprika
2 Tbs Cayenne Powder
4 Tbs of Hot Chilli Powder

400g Beef Mince
350g Pork
2 Carrots
2 Sticks of Celery
1 Onion
4 Jalapeños
4 Chipotles
2 Tins of chopped tomatoes
1 Tin of cannellini beans
1 Tin of black beans
1 Tin of Kidney beans
1 Litre of chicken stock

Every time I make buffalo wings I keep the wing tips, I use these to make chicken stock, adding carrots, celery, 2 bay leaves, salt and pepper.

Combine the cumin, paprika and chilli powder and toast in a dry frying pan for a few mins and rehydrate the chipotle's.

Brown the mince in a little chilli oil if you can get hold of it. Once browned, remove from the pan and drain the excess liquid.

Finely Chop the carrots, celery, onion, jalapeños and chipotles.

Fry the veg for about 5 mins then add the spices and mix well. You may need a couple of tablespoons of stock to loosen.

I smoked a pork shoulder last night, cubed and ready to add.

To the frying veg add the mince. pork, chicken stock and tomatoes. Let simmer for about an hour.

Its not a chilli without beans! Add all three tins, cover and simmer for another two hours.

Its the kinda meal that gets better with time, I'll often let this simmer away for 5 hours or so, I guess the next picture might just be an empty bowl! :D

At a rough guess i'd say there's a good size meal for 8 people

looks good but I have to say '' chilli and beans are 2 different dishes''. Don't mess with Texas! :lol:
