Smoking using Peat

Postby THE BEAN » 20 Oct 2009, 12:02

Hi all - At Toby's launch event I provided samples of Peat for people to try using as a fuel, mixed with their normal charcoal fuel. I would really like to know what people think/thought please. Toby mentioned yesterday that some people had told him the flavour produced using peat was not great - please let me have more detail. Waitrose sell salmon smoked over peat and heather which is lovely. I have a chef in Lincoln using peat dust to hot smoke Duck and their customer feedback is very good. If anybody wants to try out the peat please let me know. Thanks, Clive, alias The Bean.
