Got a mates wedding this weekend and he's asked us to do the food for the evening for 105 people... He want's a buffet style affair so we are doing pulled pork butty's, ribs, pizza's and wedges. Got to cook everything here and reheat at the venue where they have a full commercial kitchen.

Got 4x 5.5kg shoulders, and three boxes of Bookers ribs (about 30 racks of ribs), a shed load of potatoes and for the pizzas we'll be doing square bases tonight, and they will be pulled pork pizzas with a veggie (sorry) option of peppers and mushroom.

I just hope it goes as planned and he's still my friend after the weekend

Best of luck. Just make sure the alcohol is flowing as drunk people are very forgiving

I'd think about cooking more pork shoulders as the last wedding we did a few weeks ago was for 130 and we got through 9 pork butts. For 100 people I would cook at least 6.
