Cyderpig goes commercial

I had the pleasure of spending last Saturday with Simon (Cyderpig) and his family where he showed me the complexity of his new Venturi smoker.
The lit coals go in here with the wood (chunks, chips or sawdust) of your choice.

The smoke is pumped through the pipe into the smoking chamber by cunning use of electricity.

The food is placed on the racks or hooks for smoking (it was being cleaned hence why looks dirty in the base)

Is that a DIY cabinet or a off the shelf item?

How do you control the temperature? Or maybe the cabinet is so large that isn't really an issue? How long will the smoke generator run? A smouldering pile of wood chip as fuel would last hours I suppose. Very interesting. I would like to know more if you are able to share more.

From conversations, the temp isn't an issue as it's cold smoking and will only rise a degree or two due to the size of the cabinet, it's well sheltered from the elements in a shed I couldn't even fit in the footprint of my house & what passes for a garden :mrgreen:
The fuel used is charcoal with the wood dust/chips of choice added in the burner pot.

Hi All
Thanks to Keith for posting the pics.
The Venturi Smoker is made from an old water softening unit, the pond pump that powers it came from a charity shop.
We grind our own shavings and wood dust.
The unit burnt for 6hrs plus on 4-5 handfuls of shavings before I shut it down.
The cabinet is an old commercial fridge unit.
Check out Venturi smoke generators on You Tube, they are so simple to build.
Just remember Cold smoking has its own little foibles just like Hot smoking, don't expect to get it right 1st time, but don't give up as the rewards of good cold smoked produce are fantastic.
I have just got a contact to supply a local pub with 3kg of Cheeses each week.
