Brinkmann Spares

Hi guys

I got the above wee grill (Brinkman 810-2100-0 http://images.brinkmann.net/docs/pdf/810-2100-0.pdf from what I can tell) free from some friends of friends. Supposedly you can smoke on it but I can't see any way of controlling air flow with the massive gaps around the lid and fire bowl.

I have the firebowl with it but no water bowl and no thermometer that leaves a stinking great hole in the top. It's a lovely wee thing as a reserve at the minute. Trouble was I was hoping to use it mainly for Roosterkoek when the party grill or the Weber are firing hot (or that one day a year when the party bbq and the weber are running hot and full!).

Do Brinkmann do spare water pans or someone else (~390mm/15 3/8") a suitable one? Or is there a decent cheap material to make a deflector out of? Also anyone have any idea for making something to fill the thermometer hole?
