Cuts by request

I went to visit my friends' farm at the weekend and they are having a couple of bullocks "done" soon and said "let us know if there are any exotic cuts etc you want to request"

Short of Short Ribs and Packer cut brisket I'm low on inspiration

Whole beef chuck, cheeks, tail, shin, neck.. I'd also go for any leftover bones to make into stock
