what are your ribs like as in size , cost , weight and meat content i have been finding here in oz

size 25cm by 15cm

cost about $12.00 KG

weight about 600-700 g

meat content trimed right back to the bone

have aked a few butchers if they could leave more meat on but all say will ruin the bacon so no
do you have the same proplem

My butcher gets "spare ribs" or "king ribs" as opposed to baby backs, from a company that makes sausages. They are basically a trimmed belly, if you follow this link;- viewtopic.php?f=27&t=1449 (sorry still haven't got the hang of pictures yet :oops: ) you can see the ribs. These two cost me £19 the pair. It seemed a bit expensive, but a local farm shop had racks for £9.75 each but REALLY overly trimmed. I've recently found baby backs in one of our "upmarket" supermarkets, pre-packed at £2.50 - £3.00 each they are in my freezer for nibbles at Christmas so if I remember I'll take some pictures then.

i have the opposite problem. my butcher basically sells me the belly but removes the skin. they are very very substantial, but set me back about £17 a pop and needs a lot of trimming. another butcher in coventry also sells what i can only describe as tips - the triangular end bit and they go for a bout £1.50 each which is what i get when i'm feeding friends

Yes but just think what you can do with the trimmings, faggots, fatties, sausages etc, £17 for what you describe as a skinned pork belly is, IMHO a good price.

I get my ribs from a local resturant that buys Belly with the ribs on (Its cheaper for him to buy it un-butchered), he does not use the ribs apart from as a stock, so I get his Ribs, he gets an extra rack or two thrown on the Smoker when ever i'm smoking.

It may be cheeky, but if you dont ask.
