Another Hello From Bedfordshire

Hi All.

I am also in Bedfordshire, but originally from Hertfordshire (Stevenage). I am very new to low & slow, and smoking, but have been outdoor grilling for more years than I would like to own up to.

Was doing some research between the WSM and The ProQ XL20, when I came across this site, some excellent information, so joined, still don’t know which way to go though. :roll:

My main cooking activities are on lump wood charcoal, but do resort to gas every now and then.
Currently have to cook on: Weber One Touch Premium (57) with rotisserie and wok. . 3 open top charcoal BBQs. Trinidad Gas BBQ with grate, griddle and bowl. Paella 300mm gas burner with 28cm, 36cm & 42cm pans. Chiminea. Fire pit.
As you can see all fast cooking.

Also I am attempting to build a proper clay oven, but having trouble sourcing some decent (and free) clay.
So Hi to all, and hopefully start to pick up tips on the low & slow and smoking.

Beds is certainly on the up........ 8-)

Looks like u have nice array of kit..........try your next paella on charcoal picks up a little smoke :P

I also have a desire for wood fired ovens......modular kit in garage waiting for a decent spell of weather to start the build, have pm you a link to wfo forum ;)

Does anyone near you sell "Clangers"? I don't mean the knitted mice who guard the soup dragon either :lol:

Hi Gazz. replied to your pm, yes I was a member on the previous forum he had.
I did a one day course in Cambridge on building the ovens from raw materials, still have the urge to do that..

Thanks Keith, might just hold you to that, If I am ever allowed back, :lol: ,can see you are fairly busy at the moment though.
