Hello from Brighton!

Hi,

I'm an Irish man living in Brighton. Over the last year or so, I've really gotten interested in smoking meat, low and slow. I suppose I got the bug from watching Diners, Drive ins and Dives along with Man V Food on The Food Network channel. In fact, my fiance (now wife) could see that I lved it so much, she suggested we go to California for our honeymoon which we did last August. It was amazing. I tasted some fantastic BBQ/smoked food and got truly inspired.

Over the last few months, I've had a few smokers but it's only been recently that I've really appreciated the importance of air control. I decided to build myself a decent smoker. My garden is too small for an UGS and to be honest, it seemed like a big job, so I decided on a Trash Can Smoker. I built it using ideas from the classic UGS design and the Brinkman Gourmet design. I'm extremely happy with it. I've put a build post up here: viewtopic.php?f=18&t=3496

It's great to see this fantastic cuisine finally make its mark here in England. It's also great to find a forum so that I can learn from people on this side of the world as well as the boys across the pond.

On Saturday, I'm going to put my new smoker through the paces. Planning a get together with around 15 people so am doing pulled pork, pepper stout beef, homemade Texas Hot Links and Brats and maybe a chicken. I'll be sure to let you know how it turns out!

I hear ya! I got so tired of watching Guy eat all that delicious low and slow bbq, I decided to do something about it and found myself here. :D

I eat there often. Had an amazing pulled pork sandwich last week. In fact, it was better than the pulled pork sandwiches I had in the states. Their BBQ sauce is absolute heaven.

Yes indeed he serves some great food. We've yet to find anywhere else (including home :( ) where you can cut the chicken breast with the side of a normal fork. Not break it up but actually cut it.

Yep. He knows what he's doing. I've been tempted to ask him if I could help out for free one day in the summer to learn the ropes.
