Got a 13lb full shoulder and had hoped to WOW some friends today with my new WSM but cook time seems to be longer than expected lol...now at 25hrs and seem to have hit a second stall at 178 but I aren't giving up on it, it'll take as long as it takes. Looks good and very little resistance on pushing the probe but going to wsit for 195! Just pleased I got some emergency ribs on at lunch time, they were perfect for the guests at 18:30 using 3-2-1 method. :P

Dogged determination and British never give in spirit !!!! Just foil it and oven it, after 25 hours I think /I know my spirit would have surrendered , give in and try again.

I salute your dogged lunacy. Most folk would go with a 2 kilo budget special from asda to test the water, but not you friend 13 kilos of shoulder straight off the bat!

Having read most of what has been on these forums, and blessed with a memory like a steel trap I do not recall anyone ever attempting such a monster shoulder. For your sanity next time out why not do a couple of 5kg bad boys and save yourselve the stress??

I know the answer because they wont be as "BIG!"

I'm wondering what kind of monster pig produced a 13kg (28.6lb) shoulder and how it fit inside a WSM!

It was 13lb...Waited till 4a.m and got it to185° so went to bed...got up at 8 and it was done...36hrs and it is beautiful, best lunch sarnies i've had!...tired now!...not sussed out how to put pics on yet for you but will do.

Lazy sod, all that time smoking & you didn't find 2 seconds to cut the foil on the bottle vs ripping the cork through!

Impressive first cook, even my wife commented on your bravery. Think my first on the kettle was a 7lb & misjudged timings & we ate at 10pm, but that's what friends are for!
