Pizza??

I'm interested in cooking pizza on one of my bbq's and wanted some advice. I have a WSM 47 and a kettle (although thinking of replacing it with a one touch) and have been looking at everything from ceramic plates to buying a KettlePizza.

I struggled to keep the temp up last time I tried to cook hot (4-500f). Anyone out there cook a pizza on a WSM (or any smoker) with success?

Hi Conor.
Never on the WSM(57). Couldnt get the temps high enough.
Have had "relative" success on the OTP, but still wasnt happy with temps + used a lot of lump to get there for a 5 minute cook. Then it would sit there unusable until it cooled down enough to cook other stuff on it.Used the Weber pizza stone.
Now use the gas bbq :oops: :oops: for them and have never looked back.

Thanks Derek, that was kind of what I expected. Something deep down inside me just just can't bbq on gas - seems wrong.

Don't think of it as BBQ think of a fast modern clean Pizza service ;)

It seems the OED has only recently changed its definition of the noun "barbecue" to be more generic and thereby include gas grills. Previously it referred to a grill over a wood or charcoal fire.

I prefer to stand by this definition, and mock my colleague who refers to his gas grill as a barbecue :)

Only because I no longer own a gas grill of course.....

In all honesty it was the missus who wanted the gas grill, and she does knock out same great deserts on it. (And bread rolls).

I've done pizza 3 time using Weber kettle 57 with pizza stone. Temp is hard to get high to brown the edges (stays white). Some YouTube videos use wood or leave the lid just off set more air flow.

I have the weber pizza oven to go on top of the OTP. Have to say it makes awesome pizza with perfectly cooked bases and nice bubbly cheeses goodness on top. A bit pricey if you're not going to use it much but have had a few pizza parties including one 3rd birthday and feel I'm getting my money's worth out of it.
