Olive wood

Postby Neythen » 31 Jan 2014, 20:53

Hi guys.

Just wondering if anybody has any experience on using olive wood to smoke or as logs go cook bbq on? I know it may be not that easy to get hold of in the UK, but I'll be able to get hold of a load from family in Spain.

I was told on a cold smoking course, so I don't see it would be different, that you can safely smoke with wood from any tree you can eat the product of.

I've used olive wood in a wood burning pizza oven and it gave off a nice smell and taste, although i've never thought of pairing it with meats but don't see why it wouldn't work

I kinda thought that it would be safe, the Spanish use it for cooking paella on (when they're not cheating and using gas rings!). Will have to get some and give it a try. Whilst I'm at it, might try some orange and lemon chunks too.
