First of all, during the day, I had my cold smoker going, with a shallow bowl of milk on one shelf, a bowl of cream on another, and a couple of vanilla pods on the top shelf. This was smoked for 6 hours over maple dust.
Next, I used the milk, the vanilla and some of the cream, together with some egg yolks, to make a custard. While that was cooking, I had a couple of skewers of fresh strawberries on the pellet grill, brushed with maple syrup.
Then it was simply a case of crushing the strawberries (keeping a couple aside for decoration), and folding into the smoked custard and the remaining (whipped) cream, then topping with a couple of grilled strawberries. Then into the fridge to chill.
It's the first time I have tried this twist on a fairly traditional recipe, and I am really pleased how it turned out.
