Afternoon all,

I'm Stuart, 26 from sunny Aberdeen in Scotland!

Only stumbled across this website today, but hoping it will turn out to be a valuable tool for me, and can hopefully share some of my knowledge as well.

I've been smoking meat 'Low n slow' for around 2 years now. I'm the proud owner of a Bradley Digital 4-Rack and a WSM 22.5" but hoping to add an Offset to my arsenal by the end of this short, wet summer.

Looking forward to talking to you all and learning about how you guys combat the UK weather when trying to cook for 12-15 hours straight!, :D

Hello And welcome, that's an impressive collection you have there looking forward to hearing from you about your cooks. Regarding the weather the most important tip I have is creating a good wind break of some description, you learn to live with the cold and higher fuel consumption but wind is too variable when doing a cook and makes keeping temperatures a nightmare.

Any idea what offset you are looking for?

Hi JEC,

I absolutely agree with the wind break and fuel consumption, though I have seen a new toy that seems to be working wonders over in the states - the BBQ Guru - looks like a mini fan you attach to one of the vent holes at the fire pit to control pit temp. Looks like a good bit of kit so might be looking to invest some time soon!

As far as the offset goes I'm looking at possibly ordering one to be shipped from the states - a Yoder Wichita, but it might cost far too much money to get it over here. If that's the case, Landmann have a couple on the market just now that look okay. Have seen people frustrated by it not holding temp though.

Is that your Big Green Egg in the display pic?

A couple of people on here have a Guru, a more popular option over here is the Pitmaster iQ110 which is available through Toby, founder of BBQS.

Yes is a BGE it's an XL had it for a couple of years now, upgraded from a WSM, never looked back. That's a nice offset, any thoughts on how you're going to get it over from the US?

The only option I have for shipping that amount of iron in one piece is by boat, and the costs, as I'm sure you can imagine, are through the roof. And the landmann offsets just don't have the same build quality it seems - just my opinion!

I hadn't actually considered upgrading from the wsm - would you recommend a bge as an upgrade? How does it fair with pit temps etc?

I would recommend a ceramic cooker as an upgrade from a WSM as long as portability isn't a necessity for you, a bit too heavy to move around lots. I've only got positive things to say about BGE but no one is complaining about Kamado Joe either, currently cheaper and come with a slightly better internal cook system, the devide and conquer system.

It will be really expensive to get something shipped from the US but will be a much better unit than the landmann. I've always wanted a decent offset or a cabinet style smoker like a backwoods but could never justify the cost of getting one.

Portability isn't an issue at all, I had just never considered upgrading from the wsm. Food for thought though!

My thoughts are exactly the same - but a decent offset definitely seems more money than its probably worth. Not ready to give up on the idea altogether though! I'll let you know how I get on!
