I've been gagging to build a chest style unit myself for ages but never had the time. Got as far as buying some 3mm sheet and angle...

Settled for a UDS as a stop gap. To be honest the UDS has been so good I'm not sure if I'll bother now. Lol. 1 day when the kids have gone and I have 5 mintues. :)

Done!!
Yesterday was the inaugural 'firing up' of the Smoker. Started off with seasoning the beast for about 4 hours then back up to 225F and chuck the brisket on (had been dry brining for 24 hours) and 2 racks of ribs.
5 hours later (could have done with more but ran out of time) and my first ever pink smoke ring!!
She handled beautifully. Very precise temp control and easy to keep at 225, lovely wispy blue smoke from chimney.
Very happy!
