I have used both on charcoal cookers for that woodsy aroma but if I'm honest I haven't ever noticed a huge amount of difference. I think I go with what is easy to source. Wood chips can be found in abundance in the UK if you can identify a supplier. I suppose the same could be said of pellets but I think suppliers of pellets are lesser in numbers than those of wood chips.
I suspect the manufacturing process would be more labour intensive for pellets as it would be for chips and perhaps that is reflected in the price.
I use chips because I can get them with relative ease. If the same were true of pellets I would probably use those.
